Sour Cream Chicken Enchiladas

Sour Cream Chicken Enchiladas & Mexican Rice

This is a really good recipe and a different take on regular Mexican Food. It is so creamy and tasty. I have posted the recipe in the archive, I hope you have a chance to make this !

Welcome To My Food and Recipe Blog

Hey Yall !

This is my very first blog, so I am learning as I go. With the encouragement of family and friends, I decided to try this. So just please be patient with me as I learn the ropes..LOL. This is being done with trial and error, so I'm sure you will find a lot of erros as I go along. I will try to post as much as I can and share recipes with you along the way. I'll also try to add pictures as well. So as I said...please be patient with me! LOL

Anyone that knows me will tell you that I do love to cook. But I suppose loving to cook is secondary, because what I love more is seeing others enjoy my cooking! I will be the first to tell you that I am NOT a chef! I'm just a plain ole' cook! LOL. I'm also not one of those cooks that keeps my recipes a secret. I love to share my recipes with others. So, as we go along and you would like to have a particular recipe, I'll do my best to share it with you if I have it. Also, if any of you have recipes you would like to share with the rest of us, I'd be thrilled to have them!

I am a wife and a mother to four grown children, with many, many grandbabies ! So as you can imagine a lot of my adult life consisted of always feeding someone! Not only did I have 4 children to feed, I always managed to have at least two extra people every night to feed too. My kids friends always knew what time supper time was at my house..LOL. As I said, I am NOT a chef, so I am self taught. When I married at the young age of 19 yrs old, I had no clue as how to cook! The only time I was allowed in the kitchen was to help wash dishes or maybe peel potatoes occasionally...LOL. So, I read a lot of recipes, listened and watched a lot of people cook and also made a lot of mistakes along the way. I could have probably fed the entire U.S. with the amount of food I've had to throw out simply because it was such a mess...LOL. But....I learned from those mistakes and moved on to the next dish !

So, here we go with this blog and I am open to any suggestions, ideas and recipes. Sit back, sit a spell and pour yourself a tall glass of sweet iced tea, or whatever your fancy is. Now...let's talk just plain old good food !

Recipe of the Day

Crab Cakes
(Like Joe's Crab Shack)

1 Egg yolk
1/3 cup mayonnaise
1 1/2 tsp. Worcestershire sauce
1 tsp. dry mustard
1 tsp. black pepper
1/4 tsp. Old Bay seasoning
1/4 tsp. salt
1 1/4 Cup fresh breadcrumbs
3 Tbls. chopped fresh parsley
1 Lb. crab meat
Flour to coat

Beat together first 9 ingredients. Fold in breadcrumbs and parsley. Fold in crab meat. Form into 4-6 patties. Lightly coat patties in flour on both sides. Deep fry crab cakes in hot oil until browned.

Seven Up Cobbler

2 cans cherry pie filling
1 package yellow cake mix
1 can (12 oz size) 7- up

Pour 2 cans cherry pie filling in a 9 by 13 inch pan; sprinkle package of yellow cake mix (dry) over the pie filling. Pour the 12 oz can of 7-up over the dry cake mix. Bake at 350 degrees for 45 minutes

Serve warm or cold with whipped cream or ice cream.
